Up with jet lag. Cleaned out eggs, cheese, rice, jalapeño and dubious ham from fridge and baked it up.
Keeping with my mission to keep food waste from landfills and to test the scientific fact that you won’t get sick from spoiled food cooked above 165F (75C) to kill bacteria, I cooked a refrigerator casserole based on old food (been in Japan for two weeks). Ingredients included 3 week old rice, 3 week old eggs, cheese not yet molded, salt, pepper, cayenne pepper, garlic powder, celery seed, pickled jalapeños and curry powder. Mixed lightly and cooked in 350F (175C) oven for 49 minutes. Houston Police toxicology lab has not yet been called.
Forgot to mention the uncured ham in the recipe but perhaps that is because it naturally cured sitting open in refrigerator for 3 weeks before I put it in the casserole. Some white frothy bits on the ham but sure it’s ok after cooking.
