UC#3’s pursuit of the perfect tortilla continues….
My research has resulted in me being on WLBOTT Team Lard for tortillas, but one can’t overlook the side benefit of cooked bacon by being on WLBOTT Team Bacon Fat. Results to be featured in a peer reviewed article in the American Journal of Clogged Arteries[1].

Let me provide more input to WLBOTT Team Austin.
- I made some more tortillas after 1 hour resting and both lard and bacon fat were equally good.
- with respect to shape, I don’t have a tortilla press, so using a rolling pin. Shape will not matter -see comment 4.
- I don’t have a cast iron skillet or comal, but teflon skillet seems to be working well.
- I’m feeding a bunch of folks who don’t know the difference between a good tortilla or bad. Chinese, Turkish, Floridian, Marylanders, …. Bottomless Mimosas will level the tortilla criticism.
